Sauvignon
2006
Tasting notes :
A lively wine full of fruit and flavour.
The robe is straw coloured with slight tinges of green. The nose gives hints of fresh fruit which, when combined with hints of citrus gives it a fresh taste. This is a wine for drinking young, within two years, in order to preserve the fresh taste and fruitiness.
Serve cool, but not chilled, between 10oC and 12oC. Wine and food :
Ideal as an aperitif or on its own or with a drop of blackberry cordial. It tastes equally wonderful with shell fish, grilled fish or fish "en papillote". |

Chardonnay
2006
Tasting notes :
A wine of the south, full bodied and richly aromatic.
The robe is yellow with hints of gold and endowed with bright high tones.
The nose is intense yet delicate with hints of white peaches and grilled hazelnuts.
Full bodied in the mouth, plump with notes of oak and a touch of ripe citrus. A long finish.
This is a wine for keeping. It has already developed into a fine wine but will continue to improve for a further 5 or 6 years.
Best served cool, between 12oC and 14oC.
Wine and food :
Particularly good with crab meat and fish in sauces but also goes extremely well with poultry or a hard strongish cheese such as an old Cantal or Comté.

Viognier 2006
Tasting notes :
This wine has a subtle delicate taste.
Its robe is shining straw yellow, clear and sparkling. The bouquet evokes memories of quince and apricot with notes of honey. The attack is lively, pleasing and well balanced. The end is aromatic with notes of spices and the hint of liquorice extends on the long finish.
Drinking well now and will keep for up to four years during which time its subtle delicate taste will continue to improve.
Best served cool, between 12oC and 14oC.
Wine and food :
Ideal as an aperitif, it also goes exceptionally well with fish and shellfish. Also makes a good marriage with Spring lamb.

Volupté 2003 - A late vintage Viognier
Tasting notes
:
A rich tasting wine with a perfect balance between alcohol and acidity.
An underlying orange yellow robe with hints of gold. An intense and full flavoured nose redolent of ripe apricots, quinces, figs and honey.
Round and smooth in the mouth, the flavour of stewed fruits lightly punctuated by a light cool freshness. Volupté is ready for drinking now but will keep and continue to improve for many, many years. Best served cool, between 14oC and 15oC in order to fully appreciate the full richness and complexity of this wine. Wine and food :
Particularly suitable to drink as an aperitif, it also is a perfect companion to foie gras. It compliments a mild soft white rinded cheese and is ideal to drink with desserts such as tarte tatin or melting chocolate pudding. |

Fou
Rire Rosé 2004
Grape varieties :
50 % Carignan,
50 % Grenache.
Tasting notes :
A rosé, vivacious and bursting with fruit.
A pale salmon robe, the nose is full of the flavours of strawberries, blackcurrants, plums, peaches
..
The mouth is lively, well balanced and dominated by the same fruitiness as the nose while still maintaining a note of freshness that lasts right through to the finish.
Best drunk now and for the next two years in order to appreciate those fruity flavours.
Serve cool, but not chilled, between 10oC and 13oC.
Wine and food :
Fou Rire rosé is for drinking right through the meal, from aperitif to dessert.

Fou
Rire Rouge 2004
The grapes :
60 % Merlot, 25 % Carignan and 15 % Cabernet Sauvignon Tasting notes :
The robe is a deep red. The nose mingles the flavours of red and dark fruits especially blackcurrant overlain with notes of aromatic spices.
The mouth is fresh and round. The taste of fruits dominate; tannins are present but are underscored and not intrusive. This wine should be drunk within 4 years of bottling in order to preserve the vivacious fruit flavour.
Best served slightly cool (between 16 and 17oC) but can be drunk at room temperature if preferred.. Wine and food :
Fou Rire is a wine to share and enjoy, Can be drunk right through the meal and at any time of year. It goes well with salads, charcuterie, grilled meats as well as with specialist Mediterranean dishes such as caviar d'aubergine or pan-fried lamb. |

Merlot
2004
Tasting notes :
A real southern Merlot bringing memories of rich soils and bright sunshine.
A beautiful ruby-red robe. The nose brings dark fruits, plums, damsons, blackcurrants, blackberries and stewed red fruit. A feast to the senses and underscored with notes of forest floor and liquorice. The attack is unadulterated and well balanced.
The deep rich flavours of liquorice, dark plum, blackcurrant and blackberry fill the mouth whilst the hint of dark chocolate underlines the flavours and extends the finish.
Good tannins softened by the time spent in barrel. The 2001 Merlot is a wine which is excellent for drinking now but it will continue to evolve and improve over the next 6 years. Best served at 18oC and decanted one hour before drinking. Wine and food
:
A good mixer. The 2001 Merlot will go well with charcuterie, any red meat, pork or lamb. It also makes a good partner to grilled Tuna.

Syrah 2004
Tasting notes
:
A typical wine from the Languedoc.
Intense cherry coloured robe. A nose, spicy with notes of dark plum, cassis, blackberry, vanilla and liquorice.
The mouth is bursting with flavours. It is impossible to ignore the insistence of them. The rich aroma of Syrah with red and black fruits and in the background violets and liquorice. Whilst ready for drinking now, this wine has the potential to improve with keeping. Best opened 1 to 2 hours before serving. Ideal temperature 18oC, but if you prefer, in summer it can be slightly cooled ( 16-17oC). Wine and food :
This wine is a perfect partner for the local cuisine ( game, meat in sauce, duck
)and also goes well with all Mediterranean cuisine.

Cabernet
Sauvignon 2004
Tasting notes :
All the strength of a Cabernet harvested when the grapes are at their ripest.
A deep red purple robe. The nose bursts with notes of cassis and myrtle, of myriads of spices and a faint hint of leather.
In the mouth, the attack is strong but because the abundance of tannins are sufficiently muted, the suppleness and length linger.
This wine is just coming of age. Ready for drinking now, it will improve with keeping and should continue to evolve over the next 6 years or more.
Best served between 17oC and 18oC. Decanting 1 to 2 hours before drinking is recommended.
Wine and food :
The Cabernet is a wine which goes well with all our local dishes. We particularly recommend trying it with a grilled "Côte de buf " a dish which will allow the wine to reveal all its attributes.

The grapes:
60% Viognier, 35% Chardonnay, 5% Sauvignon
Tasting Notes:
Pale yellow colour with green lights.
Intense notes of white and yellow fruits (peach, apricot) mingled with floral flavours.
Full and well balanced in the mouth.
Drinking well now and will keep for up to four years.
Best served cool, between 12 to 14°C.
Wine and Food:
A good mariage with grilled fish and fish in sauce, scalops or white meat.

The grapes:
50% Cabernet Sauvignon, 25% Merlot, 15% Syrah, 10% Pinot Noir
Tasting Notes:
A classic wine from the terroir.
Deep ruby-red robe.
Complex nose with black berry fruits, notes of spicies and liquorice.
Ample and full bodied in the mouth with a long finish.
Rive Gauche is good to drink in the 6 coming years.
Best served at 18°C. Decanting 1 hour before drinking.
Wine and Food:
Excellent for grilled red meat, duck breast, roast leg of lamb.

A well balanced red wine, full bodied with a subtle delicate taste.

The mouth is bursting with fruit flavours ponctuated by a light cool freshness.

This wine is a perfect partner for the local cuisine and also goes well with all Mediterranean cuisine.
